At the end of every season our travel baseball team has a team party where everyone brings a treat or side dish to enjoy. I always love seeing what people come up with to share with other families and often, I try to find something baseball themed to bring for the occasion. Today I’m sharing an Easy Baseball Cookies recipe that anyone can make and use regardless of your baking prowess. You don’t need a baseball cookie cutter or anything more fancy than a round cookie cutter, this easy baseball sugar cookie recipe, and an icing bag or bottle to add the red lines. Let’s get to making this easy baseball cookie idea!
Easy Baseball Sugar Cookies
This recipe is super easy and shhh….even uses a cookie mix! Trust me, you won’t be able to tell and your secret is safe with me! Here’s what you need:
Cookie Recipe:
- 1 pouch Betty Crocker Sugar Cookie Mix
- 1/3 cup butter, softened
- 1 egg
For the icing:
- 1 cup water
- 1/2 cup meringue powder
- 7-8 cups powdered sugar
- 2 tsp light corn syrup
- 1 tsp lemon extract
- white food color, if desired
- red food color
Recommended Products for icing cookies:
- Wilton #3 Icing Tip or smaller
- Decorating Bags
- 4″ Round Cookie Cutter
Yields 11 large 4″ cookies
- Heat oven to 350°F. In medium bowl, stir together cookie mix, butter and egg until dough forms a ball.
- On floured surface with rolling pin, roll out dough to 1/4-inch thickness. Cut with round cookie cutter; place rounds about 1 inch apart on ungreased cookie sheets.
- Bake 9-10 minutes or until edges are golden brown. Remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
- In bowl of electric mixer fitted with paddle attachment, beat water and meringue powder until foamy. Add powdered sugar, corn syrup and lemon extract; mix on low speed until combined, scraping side of bowl occasionally. Increase speed to medium-low; beat 5 minutes. Increase speed again to medium-high; beat until mixture forms stiff peaks. Transfer Royal Icing to airtight container.
- Transfer 1 cup icing to bowl; stir in white food color until bright white. Spoon into decorating bag fitted with small round tip. Pipe outline on outer edge of each cookie. Let icing set 1 hour.
- Transfer another portion of icing to bowl; stir in white food color until bright white. Stir in water, a small amount at a time (about 1/2 to 1 teaspoon), until well blended. Continue to stir in water until icing falls back into itself. Spoon thinned icing into decorating bag fitted with small round tip. Fill center of each cookie with icing. Use knife or toothpick to bring icing to edges. Let cookies set 6 hours or overnight.
- Transfer 1 cup icing to bowl; stir in red food color. Spoon icing into decorating bag fitted with small round tip. Pipe baseball details on cookies. Let icing set until completely dry.
How to Decorate Baseball Cookies
It’s so simple to decorate baseball cookies. Just draw two half circles and then draw little V’s on the circles. The first row of V’s will go downward and the other side goes upward. You can always use a glass or bowl as a template if you have an unsteady hand for the half circles.
You can either serve these cookies on a cute platter or wrap them up individually with ribbon and give them out as party favors. Other fun ideas include putting the player’s numbers on them or adding a team logo if you’re good with icing!
