One of the hardest parts of being a baseball mom is eating on the go or eating quickly before or between games. One of the best ways to alleviate the stress of being a sports mom is to be prepared with some quick on the go meal options that are already prepared, like these easy and delicious Homemade Freezer Breakfast Sandwiches. The nice thing about these is you can make them with bagels or English muffins and you can customize your make ahead breakfast sandwiches with your choice of meat and cheese.
Homemade Freezer Breakfast Sandwiches
These sandwiches are super simple to make. All you need are:
- eggs
- milk
- salt (optional)
- whole wheat bagels (or other flavors as desired)
- cheese
- protein (turkey sausage patties were used here)
You start by whisking together your egg mixture (milk, eggs, and salt) and then pouring the mixture onto a 9×13 pan that has been greased with non-stick spray.
You’ll bake the eggs in the oven for 25-30 minutes until cooked and then use a cookie cutter to cut circles out of the baked eggs for your sandwiches.
Once cut, you layer your cheese, protein, and egg and then place the other half of the bagel on top. Finally, you wrap them up with plastic wrap and place in a freezer safe bag for when you’re ready to reheat them. Place in the freezer for up to one month.
So right before you head out the door for your morning ball game, grab a breakfast sandwich from the freezer, wrap up in a paper towel and reheat in the microwave for 1 minute to 1.5 minutes, then head on your way! So easy and so delicious, right?!
How to Freeze Homemade Breakfast Sandwiches
For these sandwiches, wrap them in plastic wrap and then place in a freezer safe Ziploc bag. These can be stored for up to one month and reheated by just placing in the microwave, wrapped in a paper towel, for 1-1.5 minutes.
Homemade Freezer Breakfast Sandwiches
Ingredients
- 8-10 large eggs
- 3/4-1 cup whole milk
- 1 tsp salt, optional
- whole wheat bagels
- sliced cheddar cheese
- turkey sausage patties
Instructions
- Preheat your oven to 375 degrees and spray a 9×13-inch pan with nonstick spray.
- In a large bowl, whisk together the eggs, milk and salt (salt is optional).
- Pour the egg and milk mixture into the pan and bake 24-30 minutes until the eggs are done. Then let cool.
- Toast your whole wheat bagels in toaster or under broiler until golden.
- Using a large round cookie cutter or mason jar lid, cut the eggs. Try to have the cookie cutter be close in size to your bagels. Cut the eggs into six rounds. Toss the scraps or assemble them into making a 7th sandwich.
- Cook your turkey sausage (or other protein as desired) until done. Then assemble your sandwiches.
- On each of the bottom halves of the whole wheat bagels add egg, a sausage patty and cheese. Top with the other half of the bagel and wrap in plastic wrap, and freeze for up to one month.
- To reheat, remove the plastic wrap, place the sandwich on a paper towel, and microwave for 1 to 1 1/2 minutes until heated through. If desired, remove the top half of the bagel and toast it to crisp it up more.
